Water Supply Issue
The most overlooked cause. The water line valve may be partially closed, the supply line kinked, or the water filter clogged. No water in = no ice out. Check the water supply first — this is the fix about 25% of the time.

Scale Buildup
Bay Area water is moderately hard. Mineral scale accumulates on the evaporator plate, reducing heat transfer and eventually preventing ice from forming. This is the #1 reason ice machines need professional cleaning. Quarterly deep cleaning prevents this.

Dirty Condenser Coils
Kitchen grease and airborne particles clog condenser coils rapidly in restaurant environments. When the condenser can’t reject heat, ice production drops or stops entirely. Units near fryers or grills need monthly coil cleaning.

Ambient Temperature Too High
Ice machines are rated for specific ambient temperatures (usually up to 100°F). In a hot kitchen with poor ventilation, the machine can’t produce at full capacity. Production drops 10–15% for every 10°F above rated conditions.

Mechanical Failure
Compressor issues, refrigerant leaks, failed water pump, or faulty harvest mechanism. If the machine makes a normal cycle sound but no ice drops into the bin, the harvest cycle may be failing. Requires a technician to diagnose.
Safe Checks You Can Perform
Check the water supply. Follow the water line from the machine to the wall valve. Is the valve fully open? Is the line kinked? Run some water through a cup — is pressure normal?
Check the water filter. Most commercial ice machines have an inline water filter. If it hasn’t been changed in 6+ months, it may be clogged. Replace it and see if production resumes.
Inspect the condenser. If air-cooled, check for grease buildup on the coil. Brush or vacuum accessible areas. If water-cooled, ensure the water supply to the condenser is flowing.
Check the bin sensor. Many machines have a bin-full sensor. If ice is piled unevenly or the sensor is blocked by debris, the machine thinks the bin is full and stops producing. Level the ice and clean the sensor.
Check power and breaker. Verify the machine has power. Reset the breaker once if tripped. Some machines have a power switch on the unit itself — make sure it’s on.
Signs You Need a Professional
Heavy scale on evaporator — white mineral buildup visible on the ice-making surface. Requires professional descaling with food-safe chemicals.
Machine cycles but ice doesn’t drop — you hear the compressor run and water flowing, but ice doesn’t release into the bin. Failed harvest mechanism or water curtain issue.
Ice is thin, cloudy, or malformed — indicates water quality issues, scale buildup, or incorrect water flow. Cubes should be clear and full-sized.
Mold in the bin or machine — pink slime or black mold in the bin is a health code violation. Machine needs professional deep cleaning and sanitization immediately.
