Common Causes

Temperature swings are caused by heat getting in, cooling running inconsistently, or poor thermal mass.

Inadequate Insulation
The #1 cause. Thin or missing insulation lets outside temperature influence the cellar. When outdoor temps swing 30°F between day and night (common in Bay Area inland valleys), the cellar follows. Minimum R-19 on all walls, ceiling, and floor is required.

Oversized Cooling Unit
An oversized unit cools the cellar too fast, shuts off, and the temperature drifts up until it kicks on again. This “short cycling” creates a sawtooth temperature pattern — rapid cool-downs followed by gradual warm-ups. Properly sized units run longer cycles with gentler temperature curves.

Wide Thermostat Differential
The thermostat’s differential setting (the gap between turn-on and turn-off temperatures) may be too wide. A 4°F differential means the unit turns on at 58°F and off at 54°F — a 4-degree swing every cycle. Ideal differential for wine: 1–2°F.

Exterior Wall or Glass Door
Wine cellars with exterior walls or glass doors are subject to solar heat gain during the day and radiant cooling at night. Even insulated glass is a poor thermal barrier. Cellars should ideally have no exterior walls and solid, insulated doors.

Low Thermal Mass
A nearly empty cellar fluctuates more than a full one. Wine bottles act as thermal mass — they absorb and release heat slowly, dampening temperature swings. A half-full cellar with stone or brick walls is far more stable than an empty one with drywall.

Safe Checks You Can Perform

Log temperatures over 48 hours. Use a data-logging thermometer or a smart sensor (like SensorPush or Govee) that records min/max and graphs. This data tells the whole story — bring it to the service call.
Check when swings happen. Does temperature peak in the afternoon? That’s solar heat gain through walls or door. Does it swing with the cooling cycle? That’s oversized unit or wide differential.
Feel the walls. Touch every wall. If any wall feels noticeably warm (exterior wall, shared with garage), that’s where heat is entering. That wall needs additional insulation.
Check thermostat differential. If your unit allows it, narrow the differential to 1–2°F. The unit will cycle more frequently but temperature swings will be smaller.
Add thermal mass. If the cellar is partially empty, add cases of water bottles. They act as thermal ballast, absorbing and releasing heat slowly, dampening temperature swings.
