Display Case Not Holding Temperature?
Protect Your Product & Customers
Your glass-door display case, open-air merchandiser, or deli case isn’t maintaining the correct temperature. Display cases are especially sensitive because they’re opened frequently and designed for visibility — not maximum insulation.

Common Causes
1
Blocked Air Curtain or Vents
Display cases rely on a precise air curtain to maintain temperature, especially open-air models. Product stacked too high, too close to vents, or blocking the return air grille disrupts airflow. This is the #1 cause and costs nothing to fix — just reorganize the product.
2
Dirty Condenser Coil
Display case condensers are usually underneath the unit and collect dust, grease, and debris from foot traffic. A dirty condenser reduces cooling capacity by 20–40%. Monthly vacuuming is essential but often skipped.
3
Door Gasket Wear (Glass-Door Models)
Glass-door display cases have gaskets that wear from constant opening. When gaskets fail, warm humid air infiltrates and the compressor can’t keep up. Condensation on the glass inside is a telltale sign of a bad gasket.
4
Evaporator Coil Icing
If the defrost cycle fails or the evaporator fan stops working, ice builds on the coil. Airflow drops and temperature rises. You may notice reduced air coming from the vents before you notice the temperature change.
5
Ambient Temperature Too High
Display cases are rated for specific ambient conditions. A case near a kitchen heat source, in direct sunlight, or in a space above 80°F may not be able to maintain temperature. Bay Area summer heat can push restaurant interiors above rated limits.
Safe Checks You Can Perform
Check product placement. Nothing should block air vents, return grilles, or the air curtain. Keep product below the load line. Leave space between items for air circulation.
Clean the condenser. Look underneath the case. If the coil is visible and caked with dust, vacuum it gently. This alone can restore cooling capacity.
Check door gaskets. Close the door on a dollar bill. If it slides out easily, the gasket is worn. Also look for condensation between the glass panes — this means warm air is getting in.
Feel for airflow from the vents. Put your hand near the air discharge. If airflow is weak or absent, the evaporator may be iced over or the fan has stopped.
Check ambient conditions. Is the case near a heat source? In direct sunlight? Is the store HVAC working? High ambient temperature overwhelms display case capacity.
Signs You Need a Professional
Product properly arranged but still warm — refrigeration system issue: low refrigerant, compressor problem, or fan failure.
Ice visible on evaporator coil — defrost system failure. Needs professional diagnosis.
Compressor runs constantly without cycling — system can’t satisfy the thermostat. Low charge, dirty condenser, or undersized for the environment.

Frequently Asked Questions
Most common cause: product blocking air vents or the air curtain. Display cases depend on precise airflow — even slightly overstocked shelves can raise temperature 5–10°F. Other causes: dirty condenser, worn door gaskets, evaporator icing, or high ambient temperature.
Monthly is ideal for commercial environments. Display case condensers are located underneath the unit at floor level, collecting dust, grease, and debris from foot traffic. In high-traffic restaurants, every 2–3 weeks may be necessary. Learn about our maintenance plans.
